Title: Springside Inn cheese souffle
Description: sub for mac and cheese

Springside Inn Cheese Souffle

4 slices buttered bread-cubed
4 eggs, slightly beaten
¼ tsp. salt
2 cups milk
1 cup sharp or very sharp Cheddar
Cheese, shredded

DO NOT GREASE DISH
Mix all ingredients.
Refrigerate overnight.
Start in cold oven - set at 350
Bake at least 1 hr or until brown & set.

This a wonderful, easy dish I used at Xmas as a buffet item. My men loved it. I set it out to complement broocoli, bacon, mushrooms....... A souffle bar, if you please.

Both sons just kept hearing out more, more, more

Marge— I have a similar recipe with actually identicle ingredients but by a different name I've been making since the mid 60s that was given to me by a friend from church. I have no idea where she got it from but it goes by the name of Cheese Fluff and isn't refrigerted over night. It's been a long time family favorite I highly recommend. For my family I always had to double the recipe because they could have eaten it by the bowl full. :P To those of you with an inquiring mind it is almost like a soufflé. If you like cheese you're going to love this.

This was so popular at Xmas I consider it a lower cal version of mac and cheese (anything is)

Springside Inn is a well known restaurant in Auburn, NY. The souffle has always been a side treat. Our bridge group has two luncheons there a year and this is the highlight.

When I saw Springside Inn I thought it can't be! We live near Syracuse. Our son's wedding reception was there!
